It's so nice to have some kale plants in garden. leafy vegetables are easily contaminated by pesticides spray. I planted my kale plants last fall and they are surviving through winter. Now all I need is walk out from my back door, harvest some leaves, rinse little quick (because I know it's not sprayed!), and toss in soup pot!
Toscana Soup (2 searvings)
1/2 tube of breakfast sausage meat
2 potatoes
1/2 onion
4 kale leaves
2 cups chicken broth
1/4 cup heavy cream
salt & pepper
- Cook sausage meat until brown.
- Chop onion into small pieces and cook with sausage meat lightly.
- Dice potato into bite size, add to pot to stir fry lightly.
- Add chicken broth, bring to boil. Simmer for 15 mins.
- Tear kale leaves in small size, add to soup and cook 5 mins more.
- Pour heavy cream, stir. Serve.
