Toscana Soup

 It's so nice to have some kale plants in garden. leafy vegetables are easily contaminated by pesticides spray. I planted my kale plants last fall and they are surviving through winter. Now all I need is walk out from my back door, harvest some leaves, rinse little quick (because I know it's not sprayed!), and toss in soup pot!



Toscana Soup (2 searvings)

1/2 tube of breakfast sausage meat
2 potatoes
1/2 onion
4 kale leaves
2 cups chicken broth
1/4 cup heavy cream
salt & pepper

  1. Cook sausage meat until brown.
  2. Chop onion into small pieces and cook with sausage meat lightly.
  3. Dice potato into bite size, add to pot to stir fry lightly.
  4. Add chicken broth, bring to boil. Simmer for 15 mins. 
  5. Tear kale leaves in small size, add to soup and cook 5 mins more.
  6. Pour heavy cream, stir. Serve.
