Drop biscuits. My husband loves to eat biscuits sandwich with either bacon or breakfast sausage and jam. I used to make biscuits from scratch then started to buy frozen biscuits for easy route, because they are ready to pop in oven to bake, but I couldn’t find gluten free version. So now I'm back to making them from scratch.
This recipe from gluten free on a shoestring was easy. I enjoyed its less ingredients and short cooking time. I tried to grate butter like cheese, and it worked quite well. Not to grate my fingertips, I didn't grate all the butter... about 1 tbsp butter left not grated, but it worked good to use it for melted butter to coat on top right before pan stick in the oven. I modified her recipe/ingredients little bit:
Gluten Free Drop Biscuits
1 1/2 gluten free flour (I use King Arthur's measure to measure)
1/4 cup potato starch
1 TBSP baking powder
1/2 tsp baking soda
1/2 tsp salt
2 tsp sugar
1 stick (8TBSP) unsalted cold butter
1 cup cold buttermilk (or I used cold regular milk & 1/2 TBSP lemon juice)
- Mix dry ingredients in large bowl. Preheat oven 425f.
- Grate butter cold butter. Toss in bowl and blend lightly. Melt the leftover butter.
- Pour buttermilk (or milk&lemon) and mix quickly & lightly.
- Using large ice cream scoop, scoop and drop dough about 1 inch apart on parchment paper lined baking sheet. (Don't pack the scoop. Just lightly scoop up and drop)
- Gently push the tops to flatten them a little, then brush melted butter on top.
- Bake for 15-25 mins, until they get golden brown.
- Rest little bit after taken out from oven.
It was not layered like regular biscuits, but my husband managed to stub with fork to open one biscuit into two to make a biscuit&sausage sandwich. It got little tough once it got cold, but it was nice to have a gluten free option for biscuits. I'm gonna try again.
