Puffy Fried Chickens

I was craving for thick breaded cheap-o fast food fried chickens, but of course we can’t take those, so here I go again, make our own at home! It ended up to be very different style as I expected but it tasted good so I can’t complain much. 4 chicken thighs (in bite size), sprinkled 2 tsp consommé powder, 2 eggs, about 1/4 cup gluten free flour, 1/2 tsp baking powder, pinch of garden herb mix, 1/8 freshly ground black pepper, 1 tsp gluten free soy sauce, 1-2 tsp potato starch, and dash of garlic powder and onion powder. Mix well to make batter coats chicken well, and deep fry for about 6 mins each batch. As soon as I put chicken in hot oil, it puffed up. I wanted a crispy crunchy chicken, but it was not bad. Probably because batter coated chicken thick enough, they turned out to be very juicy. At least all chicken I made was gone from dinner table volubteerly, and I didn’t have to tell kids “make one more bite!” I’m happy about it.

Fresh Blueberry Muffins

My friend was making fresh blueberry muffins and they look sooooo good. I asked her for recipe and tried it when we had too much fresh blueberries from blueberry farm. It takes more time than just using a muffin mix from store, but oh it's worth it! And good thing is I don't have to worry about sneaky nuts in ingredients. Like I said, it takes little bit of cooking time (about 1~2hrs), so I usually do it on weekend. Last night I prepared measuring ingredients and making crumble topping before I went to bed to make morning cooking time short. It still took 1 hour to finish baking. But it's worth it.

Banana bread

I got 4 bananas going old and my husband wanted to toss them, so I made banana bread with them. Sorry I took a bite before taking pic. Easy banana bread (recipe I found somewhere, but I forgot where) 1 stick butter (110g) 1 cup sugar 2 eggs 4 bananas 1.5 cup gluten free flour 1 tsp baking soda 1/2 tsp salt Preheat oven: 350f Soften butter and mix with sugar. Mush bananas and mix with eggs. Combine 1 & 2. Shift powdery stuff and mix with 3. Pour in parchment lined pound pan, bake for 1~1.5hrs. Depending of oven, time might be different. Also, if it seems like the top is browning too quick, cover it with foil after mid point.
