I ordered ikura (salmon roe) online, and they had a free shipping cost discount if my order is more than certain amount. My shopping cart was a few dollars short, so I added the cheapest item they have, which was a smoked salmon, to get about $40 discount. And now I have a smoked salmon I didn't mean to have, well, so tonight's dinner is a chowder.
Ingredients lined up!
Smoked Salmon Chowder (Original recipe from Little Spice Jar)
(About 2qt, 2~4 servings. Ingredients cost: $15)
3 TBSP butter
1 onions (diced)
3 storks of celery (diced)
2 russet potatoes (diced)
1 14oz tomato can
2 cup chicken broth
1.5 tsp minced garlic
1 pinch of garden herb mix*
4oz cream cheese (half box)
2 tsp spice seasoning**
1 cup heavy cream
1 pkg smoked salmon***
- Saute onions and celery with butter in pot until they get soft.
- Add potato, garlic, tomato can and chicken broth. Simmer 15 mins.
- Add cream cheese & spice seasoning. Melt cream cheese.
- Add heavy cream and crumbled smoked salmon.
*I have a herb garden right outside of my kitchen. Most of them are perennials and come back every spring. It's nice to use fresh herbs in warm season, but I harvest and dry the excessive herbs when they get big. I grind them with food processor and keep in jar, so I have a very useful herb mix in hand for any season.
**Original recipe says I need Old Bay season mix. Oops I don't have that in my kitchen. So I looked up the ingredients and I thought I might be able to make a similar one with what I have. This is what I tried: Jan's Old Bay Seasoning Substitute. I didn't have a celery salt, so I just used regular pink salt I have.
Original recipe says next day will be better flavor. I bet it will be also good to add like a cup of shrimp.
