After I planted Japanese butterbur plants 2 yrs ago, we finally got some flower buds out this spring. Yay!! It’s my nostalgic soul food from Japan, wild vegetables available in spring. Bitter flavor.
I texted my dad for recipe. Butterbur buds are boiled and then chopped, lightly sir fried and made paste with miso, mirin, and brown sugar. Great for white rice topping.
