Fried chicken (breading is gluten free flour and egg), baked beans, fresh veggies, and tater tots.
Before I started gluten free food life, I used regular flour and coated chicken directly and deep fried them and it worked. I tried same method with gluten free flour but it's harder to keep breading on chicken (it came off easily). So this time, I lightly coated chicken with egg first, then coated them with gluten free flour. Breading stayed on chicken much better! It turned to be nicely browned and crispy, and very good. I mix:
1 cup gluten free flour
1 tsp salt
1/8 tsp ground pepper
dash of onion powder and garlic powder
Baked beans cans are useful since beans are already cooked and flavored, but I like adding little more to make it flavorful. I diced bacon (this time it was salt pork fat) and let fat come out, then sauteed diced half onion. Add baked beans can, and 1 TBSP sorghum, little Worcestershire sauce, brown sugar and bring to boil. Pour into oven safe dish and bake for about 1hr with 350f.
